Brew Union
As far as I know this is the only place that brews beer in Palmerston North. A fantastic brew pub, with 5-6 of their own beers and a total of 20 beers on tap, a huge gin selection, cocktails and a food menu hitting the sweet spot between good pub food and flash restauraunt.
If you come in from the Broadway side you literally walk through the brewery to get into the place, which is a nice touch, and makes any homebrewers (who dream-of-owning-a-brew-bar) a little weak at the knees.
They offer a range of beers, which can be ordered in a little tasting paddle. There's no set taster, so you have to choose four from the 20 they offer. The first time I went I felt obliged to try all in-house beers, but on subsequent visits I've had all sorts of offerings. The majority of the beers they serve are hoppy pale ales (IPA/APA/NZPA/XPA/NEIPA), but they do have the odd stout, porter, white IPA, black IPA, red IPA, pilsner, cider and even alcoholic ginger beer.
The in house beers are all again primarily hoppy pale ales, with a golden ale, an NZ pale ale, an IPA, and their swamp juice NEIPA (which is delicious). They also have a Pilsner, which was very drinkable and a fairly standard NZ Pilsner.
The food is yum, and I also went to a gin club night, with a five course meal matched with 5 gins (each with a botanical and a specific tonic to add). Food was pretty flash, gin was yum (and the beers were good).
I can't say I know Palmerston North fantastically well, but I think it's probably the best place for a beer and some food in town.
